From time to time, I like to share my recipes for healthy and delicious dishes like this one. I hope you enjoy it as much as I do!

Cauliflower Pizza

  • 1 large cauliflower, whole
  • 1-2 eggs, beaten
  • 1-¼ cup skim mozzarella cheese
  • 2 tbsps grated Parmesan cheese
  • Salt, pepper, garlic powder, basil to taste

Recommended toppings:

  • Tomato sauce
  • Three-cheese topping
  • Red onions

Seasonings to taste

Start by grating the cauliflower florets until they are a fine consistency (you could also use a food processor for this). Then place the grated cauliflower in the microwave for 6 minutes until it’s soft.

Add the eggs, mozzarella, Parmesan, salt, pepper, garlic powder and basil and mix everything together with your hands. Once it’s thoroughly mixed, mold it into a round, pizza-shaped crust. Be careful it’s not too thin anywhere.

Place it onto lightly-greased parchment paper in a baking pan, or on your pizza stone if you have one. Bake on 425 for about ten minutes, then remove it from the oven. Add the tomato sauce, additional seasonings, three-cheese toppings, red onions or whatever else you want on your pizza. Then pop it back into the oven for 20 more minutes.

I use convection bake for this recipe, but that doesn’t mean you have to.
